Cooking with Madjon: Sway Fish in Malt Sauce
TOTAL TIME: 25 minutes
PREP TIME: 10 minutes
COOK TIME: 15 minutes
INGREDIENTS
1 pound (about 6 filets) of sway fish or white fish
Salt and pepper, to taste
1/4 cup of malt vinegar
2 tblsp. of sugar
1 tsp. of dried dill
1 tsp. of onion powder
1 tsp. of garlic powder
1 tsp. of Old Bay seasoning
1/4 cup fresh cilantro, chopped
3/4 cup of olive oil
DIRECTIONS
1. Preheat oven to broil setting.
2. Clean fish and place in a shallow baking dish.
3. Mix the malt vinegar, salt, pepper, sugar, dill, onion and garlic powders and blend until smooth.
4. Add olive oil.
5) Coat fish with mixture on both sides
6. Cook until brown and/or tender.
