Cooking with Madjon: Salmon with an apricot bourbon glaze




TOTAL TIME: 20 minutes

PREP TIME: 10 minutes

COOK TIME: 10 minutes

YIELD: 6

INGREDIENTS

Six fresh salmon filets

1/2 jar of apricot jam

1/4 cup chopped cilantro

2 tbsp. of creole mustard

6 dashes of Tabasco sauce

2 tsp. garlic powder

2 tsp. onion powder

2 tbsp. olive oil

Juice from half an orange

4 tbsp. of bourbon

Salt and pepper to taste

DIRECTIONS

1. Pre-heat oven to broil.

2. Place the filets in a shallow baking pan, and add salt and pepper.

3. In a bowl, mix the apricot jam, cilantro, mustard, Tabasco sauce, onion powder, garlic powder, orange juice and bourbon.

4. Place glaze on both sides of salmon. Place salmon in oven for 6 to 8 minutes or until fish easily flakes with a fork.
