Cooking with Madjon: Blue-ribbon key lime pie
TOTAL TIME: 25 minutes
PREP TIME: 10 minutes
COOK TIME: 15 minutes
YIELD: 8
INGREDIENTS
CRUST:
14 crushed Graham crackers
3 tbsp. sugar
3 tbsp. melted butter
1 tsp. cinnamon
FILLING:
4 beaten egg yolks
1 can sweetened condensed milk
1/2 cup Key Lime juice
1/2 cup sour cream
8 oz. cream cheese, softened
DIRECTIONS
1. Pre-heat oven to 350 degrees.
2. Grease a muffin pan with oil; place muffin pan in oven for about five minutes to heat.
3. Crush graham crackers in a bag or blender, then add the sugar, melted butter and cinnamon.
4. Mix well and pour into a pie pan. Press mixture to the bottom and sides of the pan to make a crust.
5. Bake the pie crust for 10 minutes.
6. Mix the softened cream cheese and sour cream together, and then add the milk, key lime and beaten egg yolks and blend well.
7. Pour the filling into the pie shell and bake it for about 15 minutes.
8. Serve cooled with whipped cream on top and some almonds if you wish.
