Cooking with Madjon: Key Lime Parfait
TOTAL TIME: 20 minutes
PREP TIME: 5 minutes
COOK TIME: 20 minutes
YIELD: 6
INGREDIENTS
4 cups of milk
1/2 stick, or 4 Tbsp. of butter
4 egg yolks, beaten
1/2 cup cornstarch
pinch of salt
1 tsp. vanilla
1/2 cup key lime juice
3/4 cup crushed graham crackers
1 small carton whipping cream
DIRECTIONS
1. Mix the cornstarch, sugar and salt together in a pan over low heat.
2. Add milk, vanilla, beaten eggs and key lime juice.
3. Heat slowly and stir frequently. After it thickens, add the butter. Remove from heat and cool.
4. Beat the whipping cream according to instructions.
5. Layer the crushed graham crackers, pudding mixture and whipped cream in the serving dishes. Top the parfaits with remaining crushed crackers. Serve immediately.
