Cooking with Madjon: Southern Corn Bread Muffins
TOTAL TIME: 40-45 minutes
PREP TIME: 10 minutes
COOK TIME: 30-35 minutes
YIELD: 18 muffins
INGREDIENTS
2 cups of self-rising corn meal mix
1/2 cup of flour
1/4 cup of sugar
1 stick of melted butter
2 eggs
2 to 2 1/2 cups of buttermilk
DIRECTIONS
1. Heat oven to 425 degrees.
2. Grease a muffin pan with oil; place muffin pan in oven for about five minutes to heat.
3. While heating pan, mix all ingredients in a bowl until well blended.
4. Remove pan from oven; pour mix into muffin pan.
5. Bake until golden brown, usually 25 to 30 minutes.
