Cooking with Madjon: Very Southern Collard Greens
TOTAL TIME: 55 minutes
PREP TIME: 15 minutes
COOK TIME: 40 minutes
YIELD: 6
INGREDIENTS
1 bunch of collard greens, rinsed well
1 onion, chopped
1/2 pd. of bacon, chopped
1 1/2 tsp. onion powder
1 1/2 tsp. garlic powder
1/4 cup of sugar
1 tbsp. of vinegar
8 dashes of Tabasco sauce
Salt and pepper to taste
Water, enough to fill about 1/4 of pot you will be using to cook greens
DIRECTIONS
1. Clean the greens, remove the stem of the leaf and tear the collards into smaller pieces.
2. Place the bacon and onion in the pot and begin browning them.
3. Once onion and bacon is browned, add the water to pot.
4. Place the greens in the pot, and add salt and pepper, onion powder and garlic powder.
5. Add sugar, vinegar and Tabasco and stir well.
6. Cover the pot; cook until greens are tender. (If you are using a pressure cooker, cooking will take about 30 minutes; cook time will be longer in a conventional pot.)
