Food for thought
Cooking using the "kiss" principle
As far back as can be remembered "chicken-fried steak" has been a favorite main dish in the South. The simple process of its preparation and its ultimate tastiness make it an old favorite.
Main dish
With this "old, original recipe" starts with 2 pounds of round steak, cut ¾-inch thick; salt and pepper, flour, 4 tbs. chopped suet, water.
Rub steak liberally with salt and pepper. Pound as much flour into it as possible. Then brown slowly on both sides in hot cooking fat. Add a tablespoon or two of water; cover and steam or simmer a few minutes to make the meat fork-tender; makes 6 servings.
Side dish
Another simple original recipe that is a good companion dish is "Squash Fritters."
Boil a whole squash (any type), about 1-¬½ pounds, until tender, then mash. Add 1 large chopped onion, 2 large eggs, salt and 3 tbs. corn meal. Make patties and fry until light brown.
Dessert
Finish off your meal with an "Easy Fudge Cake"
1 stick butter, 1 cup sugar, 1 cup flower, 1 tsp. baking powder, 4 eggs, 1 large can chocolate syrup.
Mix as usual, put in greased and floured pan. Bake at 350 degrees for 45 min. Serve with ice cream or top with whipped cream.
