Swamp Fox, a new restaurant on Chesterfield Street, is aiming for a soft opening next week.
Located across the street from the Aiken County Courthouse in the building formerly occupied by Olive Oils, Swamp Fox bills itself as a fine Southern cuisine restaurant.
The owners, Connie and Tommy Dean, and head chef, Ken Roberts, have been hard at work on the property planting new shrubs and flowers out front and cleaning and painting the interior.
“We are shooting for a soft opening by next week. That’s the goal. We’re going to try,” Roberts said.
Roberts said Tommy Dean is a fan of South Carolina history and chose the restaurant’s name in honor of Revolutionary War militia leader Francis Marion, who was nicknamed the “Swamp Fox” for leading a band of fighters through the low- and back-country swamps against British troops.
Staff feel the quaint character of the house with its outdoor dining patio surrounded by lattice and climbing plants adds to the restaurant’s Southern charm.
And, the location can’t be beat, according to Roberts.
“The location is primary – there is residential behind us, the courthouse across the street, and we’re downtown,” he said.
The eatery’s dinner menu will include shrimp and grits and a pecan-encrusted porkchop. Entree prices range from $13 to $25.
“It’s comfort food at a higher level,” Roberts said. “Comfort food up three or four notches.”
Lunch will be a traditional meat and three-side fare.
Swamp Fox will also serve a full breakfast menu, as well as brunch on Saturdays.
Swamp Fox will be open for breakfast and lunch Mondays and Tuesdays, and will be open for breakfast, lunch and dinner Wednesdays through Saturdays.

The location most recently housed VZ’s Big Easy, a Carolina-Creole-Cajun-style restaurant, but has been vacant since the eatery closed more than one year ago.
